1 1/2 eggs
1/2 teaspoon salt
1 tablespoon vegetable oil
1 pound chicken breasts, cut into cubes
1 1/2 cups shredded Cheddar cheese
1 cup shredded lettuce
1 teaspoon Worcestershire sauce
1 1/2 cups shredded sharp Cheddar cheese
2 tablespoons Italian-style dried oregano
1 teaspoon chopped fresh parsley
Preheat oven to 350 degrees F (175 degrees C).
Combine eggs, salt and oil in small saucepan. Mix until smooth.
Stir chicken into egg mixture. Blend with cheese, lettuce, Cheddar cheese, cilantro, Worcestershire sauce and Cheddar cheese. Pour chicken mixture mixture into a lightly greased 18 x 8 inch baking dish. Cover loosely with foil, using kitchen towels to keep warm.
Bake uncovered for 20 to 25 minutes. Remove foil and bake 45 minutes. Remove foil and cover tightly with foil, leaving foil uncovered. Pour covered chicken mixture into baked dish and layer with lettuce mixture, Cheddar cheese, cheese sauce, oregano, parsley and Cheddar cheese topping.
Bake uncovered for 10 minutes, then turn chicken over and bake 15 minutes more. Cover tightly with foil and season with salt and pepper. Bake 20 minutes more.
