Chocolate Jewels Cookies Recipe

Ingredients

1 cup butter

2 1/2 cups white sugar

1 cup packed brown sugar

3 eggs

1 teaspoon vanilla extract

2 1/2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1 cup semisweet chocolate chips

1 cup flaked coconut

3/4 cup flaked coconut

3/4 cup chopped pecans

2 cups rolled oats

1/2 cup rolled oats

1/2 cup butter

1/2 cup white sugar

1/2 cup brown sugar

1/4 cup chopped pecans

1/4 cup chopped walnuts

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets. Sift together the flour, baking powder, baking soda and salt; set aside.

In a medium bowl, cream together the butter and 1 cup of sugar until smooth. Beat in the eggs one at a time. Stir in the vanilla. Beat in the flour mixture alternately with the milk, mixing just until incorporated.

Divide the dough into four and then scoop into prepared cookie sheets. Bake for 12 to 15 minutes in the preheated oven, or until centers are lightly browned. Cool on wire rack.

To make the filling: In a medium saucepan, stir together the cream mixture, mashed bananas, milk, sugar and vanilla. Bring to a boil; reduce heat to medium-low, and cook, stirring frequently, for 2 to 3 minutes, or until the mixture thickens to a thick, lumps are removed. Stir in 3/4 cup of chopped walnuts.

To make the frosting: In a small bowl, stir together 1 cup of rolled oats, 1/2 cup of walnuts, and 1/4 cup of chopped nuts. Transfer to a nonporous glass bowl and beat until smooth. In a small bowl, beat brown sugar and 1/4 cup of chopped nuts with 2 tablespoons butter. Stir in the milk. Spread evenly into frosting mold. Refrigerate for 3 hours or until firm.

Whether you use Japanese starters or not, you're going to need some pretty rough around the edges. These were quite nice, and I used dry parsley. I will make this time and time again.

I made these for a church bshippy party. Was a great dessert to bring home from the party! I would use a bit more chocolate chips, ginger and almond extract, otherwise a delicious cookie and topping, thanks!
