Banana Pudding II Recipe

Ingredients

1 (15 ounce) can sliced and diced bananas

1 cup boiling water

1 cup milk

1 egg, lightly beaten

1 teaspoon vanilla extract

1 1/4 cups frozen whipped topping, thawed

1 teaspoon lemon zest

Directions

Place bananas in a blender or food processor, and process for about 1 minute. Pour boiling water over bananas. Cover blender and process for about 1 minute. Add milk, egg, vanilla and whipped topping. Process for 5 minutes to 1 minute. Stir in lemon zest. Transfer mixture to a 2 quart nonstick pan. Chill for 1 hour.
