1 (15 ounce) can sweet potatoes
1 cup white sugar
1/2 teaspoon baking soda
6 eggs
3 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon ground nutmeg
1 teaspoon ground cinnamon
Preheat the oven to 350 degrees F (175 degrees C).
Place the sweet potatoes in a large bowl and mash well. Mix in sugar, baking soda, eggs, flour, baking powder, salt, nutmeg and cinnamon. Mix well. Finally, fold in the salt and cinnamon. Spoon onto a baking sheet.
Bake in preheated oven for 45 minutes, until golden brown. Tip: Remove from oven and let cool completely before transferring to a 10x13 inch baking pan. Remove parchment paper and grease a 9x13 inch pan.
