1 pound red pepper, seeded and chopped
1 pound onion, chopped
1 tablespoon red wine vinegar
1/2 teaspoon ground black pepper
1 teaspoon salt
1 tablespoon lemon juice
3/4 cup olive oil
Preheat oven to 350 degrees F (175 degrees C).
Place red pepper, onion, vinegar, and pepper onto a large baking sheet. Sprinkle with salt, lemon juice, olive oil, and salt mixture. Bake uncovered for 45 minutes.
