Squash and Buttermilk Raisin Bread Recipe

Ingredients

1/2 cup packed brown sugar

1/2 cup butter, softened

1 cup whole wheat flour

1 1/2 cups regular yogurt

1/4 cup buttermilk

1 cup buttermilk (optional)

Directions

Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 3 x 4 inch loaf pan.

In a medium bowl, stir together (for the first time) brown sugar and butter. Let mixture stand until almost cold, then stir in flour. Stir in yogurt and bread salt, and set aside to cool.

In a small bowl, combine buttermilk and buttermilk; mix well, then stir in yogurt and egg mixture. Divide batter evenly among prepared pan, and place in preheated oven.

Cover, and reduce heat to 350 degrees F (175 degrees C) for 1 hour, or until a knife inserted comes out clean.
