1/4 cup butter
1 cup white sugar
3 tablespoons vanilla extract
1 (8 ounce) can crushed pineapple
2 cups all-purpose flour
1/2 teaspoon baking powder
Place eggs in a small microwave-safe bowl. Heat microwave on low setting briefly. Stir in butter, white sugar, vanilla, pineapple, flour and baking powder. Microwave on low for 5 minutes.
Bake at 350 degrees F (175 degrees C) for 20 to 25 minutes, or until bubbly. Allow to cool cupcake is remove and puff as desired.
