1 tablespoon butter, softened
1/3 cup water
1 (3 ounce) package instant vanilla pudding mix
1 1/2 cups milk
1/2 cup packed light brown sugar
1/4 teaspoon vanilla extract
2 jiggers fresh lemon juice
1 tablespoon orange juice
1 cup vanilla ice cream
1 cup lemon-lime flavored carbonated beverage
1/2 cup lemon juice
Preheat oven to 375 degrees F (190 degrees C). Prepare ice cream by blending together butter, water, pudding mix, milk, light brown sugar, lemon juice and orange juice. Pour mixture into an 8 ounce plastic container. Set aside to chill.
Bake at 375 degrees F (190 degrees C) in the preheated oven for 5 to 7 minutes or until ice cream is set. Cool on rack in the refrigerator. Spoon cream into glass serving bowl, and fill with lemon juice.
