Paulina's Meat Loaf Recipe

Ingredients

2 pounds lean ground beef

1 onion, chopped

2 potatoes, peeled and cubed

1 egg, beaten

1 cup chopped celery

1 cup miniature marshmallows

3/4 cup water

1 teaspoon salt

1/8 cup brown sugar for boiling

1 tablespoon garlic powder

2 tablespoons dried parsley

7 drops hot pepper sauce

1 teaspoon chopped fresh thyme

1 teaspoon dried oregano

2 teaspoons dried chives

1 teaspoon light brown sugar for garnish

Directions

In a large skillet, brown the ground beef or chicken. Drain excess fat.

Trim the fat from the beef or chicken. Saute onion and potatoes in the microwave for about 15 minutes.

Stir in egg, celery and marshmallows. Mix lightly, and add water if necessary. Reduce heat to low, and stir in water, salt and brown sugar. Bring simmer to a boil and stir in garlic powder, parsley, pepper sauce, thyme, oregano and chives. Reduce heat to medium.

Bring mixture to a boil, and cook for five minutes. Reduce heat to medium, and stir in scallions and 2 teaspoons pepper sauce. Bring to a quick boil, and mix thoroughly. Season with brown sugar, garlic powder and parsley.

Drop by tablespoonfuls of meat mixture into two ramekins. Pour a foundation of orange sauce over ramekins and fill with meat mixture.

Cover ramekins and refrigerate 2 hours.
