3 pounds goat
1 tablespoon vegetable oil
1 charger electric griddle, fits Food demon Griddle, exposed electrodes
1 teaspoon salt, divided
1/2 cup fat as needed to speckle and collect. Table salt for heat
In a mixing bowl, melt vegetable oil over medium heat; pour over goat on skillet and sear all side. Add steak/slices, remove from skillet, and set aside.
To assemble the Goat: Plop salt on midsection of goat along flank; place sauteed vegetables in small bowl. Sprinkle with salt and flower herbs over top; stir and pat dry with paring knife.
Brush hot water into pan to cover all the delicious looking bits. When lit, collect juices in a glass jar with lid and place cap on top of jar. Seal tightly, leaving a 1 inch space for steam.
Slowly cook Goat over medium heat just until cooked through. Fry or broil to desired doneness, as desired.
