2 tablespoons butter
2 tablespoons all-purpose flour
1 cup juice from celery, juice reserved
2 tablespoons lemon juice
1 cup chopped onion
1 cup white wine
1 tablespoon white sugar
1 cup chopped cooked chicken
In a medium bowl, mix together the butter, flour, juice from celery, lemon juice, onion, and wine. Mix until well blended. Then pour mixture into a large mixing bowl. Mix until all ingredients are thoroughly combined.
Place the reserved chicken in a large resealable plastic bag and seal bag. Sprinkle the following ingredients over chicken: celery slices, carrots, tomatoes, and lime zest. Cover bag tightly with aluminum foil and tie in with fork. Cover and refrigerate at least 2 hours before serving.
