2 (16 ounce) cans Italian-style potatoes, washed and drained
2/3 cup margarine, melted
Preheat oven to 375 degrees F (190 degrees C).
Split potatoes and place 1 teaspoon margarine in a medium bowl. Mix together; return medium-cooked potatoes to bowl with melted margarine, and set aside.
Heat margarine in a large skillet over medium heat. In a small bowl, toss boiled potatoes with vegetable mixture, skin side up, until coated with vegetable oil. Pour margarine over potato and saute until butter is melted, then pour potato mixture back into skillet.
Serve hot.
