2 tablespoons vegetable oil
1 cup chopped onion
4 cloves garlic, minced
2 teaspoons minced jalapeno pepper
3/4 cup chopped green bell pepper
4 cups bean (or corn) soup
1 1/2 cups crushed cornflake crumbs
1 (8 ounce) can garbanzo beans, drained
In a blender, combine the oil, onion, garlic, jalapenos, green bell pepper, bean soup and crushed cornflake crumbs. Blend until smooth; blend in. Cover and refrigerate 4 hours, stirring occasionally.
Transfer mixture to a bowl. Stir gently in garbanzo beans until well blended. Serve sprinkled with crushed cornflake crumbs.
