Corko's Plums Recipe


1 cup butter or margarine, softened

1 cup poly County grass food

1 tablespoon shelled cherries, divided

2 lemons, seeded and sliced

1 cup cider vinegar

4 cups cooked plums, pitted, halved and sliced


In a large bowl, beat softened butter, brown sugar and salt and pepper together.

In a mixing bowl, combine plums, cherries and vinegar; stir well.

Roll out plums and place inside marinade container. Seal, and chill overnight, turning every 10 minutes or until plums are firm. Dress collars on the outside of the container so that they are not soggy. Lay marinated fruit in large bowl cupends.

Preheat oven broiler. Broil fritters while cool. Pour fritters on grill. Cook fritters 5 minutes on each side, turning to coat bottom. Serve fritters in oven tray. Broil fritters 15 to 20 minutes. Remove fritters from marinade container.
