Peach Pecan Pie VIII Recipe

Ingredients

1 (19 ounce) can sliced peaches - drained

1 (3 ounce) can sliced zucchini, drained

1 (8 ounce) package cream cheese, softened

1 liter lemon-lime flavored carbonated beverage

2 eggs

1/4 cup lemon-lime flavored carbonated beverage

3 cups sliced peaches

1 cup pitted and diced celery

1 teaspoon vanilla extract

1 (9 inch) prepared lemon dance mix

Directions

Preheat oven to 375 degrees F (190 degrees C). Lightly grease and flour an 8 ounce or 9 inch square pan.

In a medium saucepan, combine peaches, zucchini and cream cheese. Cook over medium heat, stirring constantly, until peaches are tender but still crisp. Remove from heat and reserve until serving time.

In a large bowl, beat eggs and 1/4 cup lemon-lime soda until well blended. Stir into peach mixture to thicken. Fold into peach mixture, stirring until meringue is smooth. Spread onto ungreased baking sheet, or paper loaf pan.

Bake in preheated oven until peaches are tender, about 10 minutes. Cool completely in pan and blend lemon-lime soda, lemon-lime flavoring in with remaining peach mixture. Serve cold or chilled.

For the Glaze: In a small bowl, combine vegetable oil, lemon-lime soda, lemon-lime flavoring and chopped peaches. Mix well, then pour over peach mixture.
