1 pound lasagna sausage
1/2 cup Italian-style dressing
8 ounces uncooked white rice
1 cup water
1 (16 ounce) can tomato, drained
1 1/2 cups water used for boiling
2 pounds hard-cooked eggplant, drained
2 (8 ounce) cans tomato paste
1/2 pound tomato-based Italian dressing
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 8x8 inch baking dish or 12x12 inch baking dish.
Using a wooden spoon, remove grease from inside of sausage. Mix together with hard-cooked eggplant and tomato paste, and sprinkle with tomato sauce. Pour the mixture over sausage and bell peppers.
Bake in preheated oven for 1 hour, checking to see whether they are cooked through.
