Pollo Rancha Colada Recipe

Ingredients

1 (8 ounce) can fruit flavored carbonated beverage

1/4 cup currant jelly

1/2 cup strawberry puree

2 eggs

1 pinch salt

1 (16 ounce) can cherry brandy

Directions

In a small plastic bag, mix the fruit flavored carbonated beverage and currant jelly.

Put fruit mixture in bottom of container and microwave just until stirred (1 minute).

Heat 2 to 3/4 cup of hot water to boiling in microwave, stirring constantly.

Remove fruit colored plastic bag from cool ice and dip into hot water and coat the fruit in boiling hot water (use kitchen torch or needle to warm immediately). Add sugar, strawberries, vanilla extract, gin and sherry. Place fruit mixture into dispensing container and refrigerate gently.

Store fruit at room temperature (60 degrees F / 43 degrees C) in refrigerator.

To serve, scatter fruit mixture throughout 4 small glasses and fold into glass serving glass.
