1/2 cup butter
2 1/2 cups all-purpose flour
1 cup packed brown sugar
1/2 cup white sugar
1 teaspoon baking soda
1/4 teaspoon salt
2 eggs
1 teaspoon vanilla extract
1 egg
1 teaspoon lemon zest
1 cup rolled oats
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, mix together the butter, brown sugar, white sugar, white sugar, baking soda and salt. Beat with an electric mixer, scraping bowl often, until well blended. Stir in eggs, vanilla extract and egg.
Descend a medium baking sheet onto the bottom and press the rolled oats into the center. Place the fillings inches apart onto the prepared baking sheet.
Bake at 350 degrees F (175 degrees C) for 30 minutes, or until patty and golden brown. Cool on the baking sheet, and serve with warm cut-outs of lemon yellow rose petals. Garnish with whipped cream and whipped cream cheese if desired.
