2 (10 ounce) cans chicken broth
1 quart vegetable oil
1 yellow onion, diced
1 bay leaf
1/2 small red bell pepper, sliced into 1/4 inch strips
2 zucchini, diced
1 large apple, semi sector apincers
2 tablespoons celery seeds
3 tablespoons blended mustard
1 teaspoon lemon juice
zest of 1 lime, pressed
In a medium bowl, blend chicken broth, oil, onion, bay leaf, pepper and zucchini. Mix well. Sprinkle with lemon juice. Top with apples and celery. In a medium bowl, blend all three ingredients, adding lemon juice just before serving. Top with mustard, lemon juice, citrus zest, apple and lime slices. Store in plastic wrap or paper bag.
