Cannon Balls Recipe

Ingredients

4 cups all-purpose flour

1 cup white sugar

1 teaspoon baking powder

1 pound coarse saltine crackers, crushed

1/2 cup all-purpose flour

2 eggs, beaten

1 1/2 teaspoons vanilla extract

1 cup rolled flaky biscuit dough

1/2 teaspoon lemon zest

1/4 teaspoon ground cinnamon

1/8 teaspoon ground nutmeg

2 tablespoons grated lemon rind

1 (8 ounce) package cream cheese or margarine, softened

1 (8 ounce) can sliced bananas, drained

Directions

Preheat the oven to 375 degrees F (190 degrees C). Lightly grease a 9x13 inch pan.

Spread the flour mixture in the bottom of the prepared pan. Layer a layer of crushed crackers, followed by 2 teaspoons flour. Combine the flour mixture with sugar. Mix in the baking powder, baking soda and saltine crackers.

Separate the biscuit dough into six pieces. Divide into two pieces and form into 1 inch balls. Place 1 at least 1/2 inch apart on two baking sheets, covering completely. Bake in preheated oven for 8 to 10 minutes, until golden brown. Roll and cut into a 20 to 25 inch circle. Slice each biscuit circle into four triangles. Place about 1/4 inch apart on ungreased baking sheets. Bake for 3 minutes, or until biscuits are golden brown. Cool completely on baking sheets.

Heat oven to 375 degrees F (190 degrees C). Roll and cut each biscuit circle into 4 triangles. Roll evenly into biscuit balls. Roll each biscuit circle into a 1 inch in diameter rectangle. Arrange biscuits in a single layer on a baking sheet. Brush generously with lemon zest and mix together with remaining lemon rind.

Reduce the size of the biscuits slightly, but keep the shape and shape of the biscuit circles together. Spread the cream cheese mixture evenly over the cream cheese biscuit dough. 15 minutes before baking, arrange the cream cheese mixture over the biscuits. Bake at 375 degrees F (190 degrees C) for 15 minutes.
