2 cups pumpkin puree
1 cup water
2 tablespoons butter, melted
6 egg yolks
1 cup white sugar
3 tablespoons all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
1 (9 inch) prepared chocolate cookie crumb crust
Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 8 inch round pie pans.
Combine pumpkin puree and water in a large bowl. Mix in butter and eggs. Stir in sugar, flour, baking soda, cinnamon, vanilla and melted butter. Mix until well blended, stirring constantly. Fold in flour mixture just until incorporated. Pour batter into prepared crust.
Bake in preheated oven for 30 to 35 minutes, or until center of pie is almost set. Cool completely before cutting into bars; serve warm or cold.
