Spinach Fried Chicken and Vegetarian Recipe


1 (3 ounce) package Italian-style frozen dinner roll dough

1 cup chopped onion

1 teaspoon minced garlic

1 pinch salt

1 teaspoon dried sausage

3 tablespoons vegetable oil

1 small head broccoli

1 plum tomatoes

1/4 cup sliced black olives

2 tablespoons sliced red olives

3 eggs, beaten

2 carrots, sliced

1/4 cup uncooked eggplant

1 (2 pound) piece bacon, fried


Preheat oven to 400 degrees F (200 degrees C).

On a large baking sheet line layer with cornflakes. Sprinkle with onions and garlic, salt, sausage, oil, tomatoes, black olives, red olives, eggs, carrots and bacon. Top cornflakes with bacon grease and sprinkle with salt, pepper and seasoning into parsley shapes. Place skillet in pan and heat oil in pan to about medium heat. Brush the top of chicken with eggplant oil. Fry chicken in oil for 5 to 6 minutes, turning once, or until juices run clear. Serve hot.

Have been using this recipe for over 30 years! Newer versions omit the flour, and are therefore more suitable for recipes based on specific brands of flour. Generally this recipe holds up well, and is a good starting point for experimentation.
