1 cup butter, softened
1 cup white sugar
3 eggs
3/4 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon lemon zest
1 (4 ounce) can sliced fresh strawberries, drained
1 (15 ounce) can sliced dates
1 tablespoon sliced almonds
1/2 cup chopped walnuts
Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9 inch round cake pans.
In a large bowl, cream together the butter, sugar, eggs and vanilla until smooth. beat in the flour, baking powder and lemon zest. Mix in the strawberries, dates and almonds. Pour into prepared pans.
Bake in the preheated oven for approximately 45 minutes, or until a toothpick inserted into the center of the cake comes out clean.
