Potato Breakfast Pizzelles Recipe

Ingredients

1 pound potatoes

1 cup butter

1/2 teaspoon salt

2 eggs

1/2 cup milk

1 teaspoon salt

1 pinch ground black pepper

2 tablespoons white sugar

1/2 teaspoon vanilla extract

1 cup all-purpose flour

3 tablespoons bread machine yeast

1/4 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

Directions

Place potatoes in a large pot and turn to coat. cover and allow to steam, about 15 minutes. Drain, cool and cut into 1 inch pieces.

Sift together the butter, salt, eggs and milk in a large bowl. Stir in the salt, pepper and sugar. Mix in the eggs and 1/2 cup salt mixture. Spoon 1/2 cup flour into the mold, and set aside.

When the potatoes are cool, flatten some pieces with the help of a fork. Mix in the flour, mixing well. Then pour into the mold or if possible, into the pan.

Bring a large pot of water to a boil. Add potatoes and cook until tender, approximately 15 minutes. Drain, cool and slice into 1/2 inch pieces.

Meanwhile, in a small bowl, whisk together the flour, bread machine yeast, baking powder, baking soda and salt. Mix well and set aside.

Place remaining ingredients in a large bowl. Mix together potato pieces, flour, sugar, 1/2 teaspoon salt, 1/2 teaspoon pepper and spread over the top of a greased 8x8 inch baking dish.

Bake in preheated 350 degrees F (175 degrees C) for 50 minutes, or until bubbly and golden brown.
