4 potatoes, peeled and cubed
2 mushrooms, sliced
2 large green bell peppers, stem ends removed
8 slices bacon, cut into 1/2 inch pieces
Preheat oven to 375 degrees F (190 degrees C).
Place potatoes in a microwave-safe bowl. Mash with water until well blended. Place with mushrooms and green peppers, and microwave on high, stirring until potatoes are tender. Pour mixture into a large resealable plastic bag.
In a small bowl, combine potatoes, mushrooms, bacon and courgette spices or seasonings. Microwave on medium-low, stirring until smooth and slightly thickened. Stir in potato mixture, and pour into prepared bread cube mold.
Bake at 375 degrees F (190 degrees C) for 10 to 15 minutes, until a knife inserted into center of the cake comes out clean.
