1/4 cup lemon juice
3 egg whites
1 teaspoon lemon zest
2 teaspoons vanilla extract
2 cups pitted peaches
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1 cup butter, softened
1 cinnamon stick
1 teaspoon baking powder
In a small mixing bowl, mix lemon juice, egg whites and lemon zest. Mix the lemon zest and sugar until well blended. Beat in the flour and baking soda; stir the peach preserves with egg mixture. Spread the batter onto the bottom of a 9x13 inch pan.
Bake in the preheated oven for 25 to 25 25 minutes, or until a toothpick inserted into the center of the baking sheet comes out clean. Allow to cool completely.
