1/3 cup butter
1/2 cup marshmallow creme
1/4 cup white sugar
1 teaspoon vanilla extract
1 cup rolled oats
1 cup apple - peeled, cored and chopped
1 cup marshmallow creme
1 cup flaked coconut
In a small bowl, cream together butter and marshmallow creme until smooth. Mix in sugar and vanilla until well mixed. Spread mixture into 2 to 3 inch square baking pan.
Bake In preheated 350 degrees F (175 degrees C) for 8 minutes or until lightly browned. Cool slightly.
Roll out the oats and spread evenly over cookie. Press remaining butter mixture over cookie. Refrigerate until cool enough to handle. Divide mixture between 2 layers in one or 2 glasses - with sides pressed together. Place small cut out cookie in each. Place on cookie sheet. Dust with a thin layer of marshmallow creme. Place on cookie sheet. Chill for 1 hour, allowing cookies to firm up. Cut into thin slices.
