2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1/4 teaspoon salt
2 tablespoons lemon juice
3 tablespoons milk
1/4 cup lemon zest
1 (9 inch) unbaked pie crust
Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9 inch shallow pie pans.
In a large bowl, mix flour, baking powder, baking soda, and salt. Beat milk with lemon juice and lemon zest into flour mixture until stiff. Pour mixture into pie pan. Pour lemon filling over all.
Bake in preheated oven for 55 minutes, until chicken is tender. Remove from oven and let cool. Transfer chicken carcass to rotary cutting board. Place bottom crust on pie and place on serving tray. Garnish with lemon slice. Dust with lemon zest.
