1 pound ground beef
1 tablespoon vegetable oil
1 (10 ounce) can tomato paste
1 (12 fluid ounce) can or bottle diced tomatoes
1 (16 ounce) can tomato soup with green chile peppers
1 (16 ounce) can whole kernel corn, undrained
1 1/2 cups fresh or frozen mixed vegetables
1 (10 ounce) package frozen mixed vegetables, thawed
salt and pepper to taste
In a large pot over medium heat, brown the ground beef and drain drippings. Mix in the oil, tomato paste, tomatoes and tomato soup with chiles. Cook, stirring constantly, until mixture is thickened and coats the back of a metal spoon. Stir in diced vegetables.
Pour in the cooked pasta, mixed vegetables, mixed vegetables, salt and pepper. Let simmer over low heat for about 3 minutes, stirring occasionally. Serve over spaghetti.
