Pecan Butterscotch Pie Recipe

Ingredients

1 (15 ounce) can evaporated milk

1 (14 ounce) can sweetened condensed milk

1 (3 ounce) can crushed pineapple with juice

1 cup chopped pecans

2 egg whites

1 tablespoon vegetable oil

2 cups butterscotch chips

1 slice butter pastry for crust

Directions

Preheat oven to 350 degrees F (175 degree C).

In a large bowl, bring evaporated milk, sugar and evaporated milk condensed milk to a slow rolling boil. Stir. Slowly pour into a 9 inch pie pan; butter pastry as necessary for easier filling.

Bake in preheated oven for 25 to 30 minutes, or just until pastry is golden brown and center is just firm. Serve hot or cold. Chill before serving.
