2 eggs
1/2 cup vegetable oil
1 1/2 teaspoons vanilla extract
3 1/2 cups all-purpose flour
1 teaspoon baking powder
1/8 teaspoon baking soda
1 teaspoon ground nutmeg
1/4 teaspoon salt
1 1/4 cups milk
1 cup frozen whipped topping, thawed
Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8 inch square baking dish. In a large bowl, mix eggs, oil, and vanilla. Stir egg mixture into flour mixture. Make a well in the center and pour in milk, whipped topping, and salt. Mix; beat with a spoon until mixture is well blended. Roll out mixture into a 10 inch round shape.
Bake in preheated oven for 15 to 20 minutes, until a toothpick inserted into center of the pie comes out clean.
Great recipe--very easy and delicious. I substituted raisins for the red, and replaced the rum with 151 rum. Cheers,
