1/2 cup brown sugar
1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1/2 teaspoon salt
1/4 teaspoon dried marjoram, crushed
1 cup white sugar
1 egg
1 cup packed brown sugar
1 cup lukewarm water
1/2 teaspoon lemon zest
In a small saucepan, combine brown sugar, cinnamon, nutmeg, salt and marjoram. Bring to a boil, stirring periodically. Boil and stir for about 8 minutes or until mixture begins to get a lukewarm consistency.
Remove from heat and stir in sugar and egg. Gradually stir in brown sugar mixture, still whisking. Adjust the lemon zest and lemon juice by adding hot water if necessary.
Pour into the prepared airtight sealable plastic bag. Refrigerate for at least 4 hours, stirring occasionally.
