1/2 cup butter
1 1/2 cups white sugar
7 eggs
1 teaspoon vanilla extract
1 cup all-purpose flour
3 cups freshly baked sliced strawberries
1 teaspoon lemon zest
1 cup chopped walnuts
Preheat oven to 350 degrees F (175 degrees C). Grease a 9 inch pumpkin pie pan.
In a large bowl, beat the butter, sugar, eggs and vanilla until smooth. Mix in the flour and beat into the butter mixture until well blended. Pour batter into pastry crust.
Bake in the preheated oven for 60 minutes or until filling is set at the edges and a knife inserted in the center comes out clean. Cool before cutting into squares.
