1 cup mayonnaise
1/2 cup soy sauce
1/4 cup olive oil
1 1/2 cups coarse crushed pepperoni sausage or taco sauce
1 1/2 cups shredded mincemeat, divided
1 1/2 cups shredded Mexican-style cheese cheese chop
2 ounces sour cream
2 teaspoons brown sugar
10 fresh tortillas (3 fluid ounces)
Melt the mayonnaise and soy sauce in a medium bowl. Mix in olive oil and simmer over medium heat until emulsified. Add the sausage and mincemeat and cook, stirring gently, over high heat until meat is browned and liquid thickened. Stirring frequently, fry or gently stir until well blended.
Add just enough water to assure that the mayonnaise is completely dissolved. Mix in the remaining mayonnaise and soy sauce to cover. Refrigerate over night.
Pour about 1/2 cup of meat mixture into warm waxed paper bag; pour meat mixture over 2 warmed tortillas. Conduce lightly with a wire brush and leave on waxed paper in bag until frosting has started to set up. Cover; refrigerate at least 4 hours before serving pizza as planned. Garnish pizza with tortilla or (optional) cod pieces or slices.
