12 ounces mixed salad greens
4 ounces artichoke hearts, seeded
4 ounces mushrooms, sliced
2 cloves garlic, minced
2 tablespoons olive oil
1 (6 ounce) can tomato juice
2 tablespoons Italian-style dry white wine
1 (28 ounce) can tomato sauce
1/4 cup chopped red onion
In a large bowl, toss all elements together. Divide the greens among squares and shape into 4 7 inch shakers. Place each onto a large serving dish or platter. Slice garnish with artichoke hearts, mushrooms, garlic and olive oil.
In a medium mixing bowl, combine tomato juice, Italian-style dry white wine, tomato juice, tomato sauce and chopped red onion. Mix thoroughly before placing the sandwiches on a platter.
