1/2 cup heavy whipping cream (optional)
1/2 cup cold milk
4 tablespoons shortening
4 eggs
1/2 cup white sugar
1 (16 ounce) package flaked coconut – cooled
In a large saucepan or double boiler, beat cream until fluffy. Remove from heat, add cold milk and shortening. Whisk until mixture reaches desired consistency. Add eggs, one at a time, beating after each addition. Stir until mixture reaches desired consistency. Whisk in sugar and coconut.
Heat through, then transfer to a medium bowl. Place patties onto prepared cookie sheets.
