1/2 cup margarine, softened
2 1/2 cups white sugar
3 tablespoons lemon juice
1 (8 ounce) package cream cheese, softened
4 tablespoons lemon juice
2 teaspoons vanilla extract
1 teaspoon milk
Preheat the oven to 400 degrees F (200 degrees C).
In a medium bowl, cream together margarine and sugar until smooth. Mix in lemon juice, cream cheese, lemon juice and vanilla extract. Beat with an electric mixer on high speed until mixture is light and fluffy. Drop by heaping tablespoons onto ungreased cookie sheets.
Bake for 8 to 10 minutes in the preheated oven, until golden brown. Cool completely before removing from cookie sheets.
