Preheat oven to 350 degrees F (175 degrees C). Grease an 8x8 inch baking dish. In a large bowl, combine brown sugar, butter, eggs, milk and remaining brown sugar. Pour into the prepared dish.
Divide strata evenly among four plates; sprinkle a portion (15 ounces) of one mixture over each stratum, then layer pans evenly in prepared baking dish.
Bake for 40 minutes in the preheated oven, until a toothpick inserted comes out clean. On a lightly floured surface, roll out bread to 1/4 inch thickness and cut into small cubes using a pumpkin cutter. After 40 minutes, remove one pan. Slice remaining slab from the oven and remove wooden spoons; spoon over hot milk and sprinkle remaining scallions on top. Chill before serving.
