1 (12 ounce) package smoked gourmet sausage, diced
1 1/2 ounces baby carrots, cut into 1/2-inch wedges
1/2 cup chopped tomatoes
1 teaspoon chopped fresh basil
1/4 pound mozzarella cheese, grated
1/4 pound Italian salad dressing - or to taste
salt and pepper to taste
1 teaspoon dried oregano
1 (16 ounce) can ravioli pasta
In a large bowl, combine olive oil, olive oil, onion, garlic, and red pepper flakes. Season with water, Italian seasoning, sausage, carrots, tomatoes, basil, mozzarella cheese, Italian salad dressing, salt and pepper. Mix together and let stand for several hours to ensure a nice dressing.
During the same time, prepare one plate for serving.
Spoon filling onto plate in approximately 20 small oven baking pan wedges. 3 in all.
Bake 15 to 19 minutes in the preheated oven, until top is golden brown and bubbly. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely. Slice quickly into 3 wedges.
