2 tomatoes, diced
1 green bell pepper
2 celery, diced
2 large green chiles
1 large cucumber
1 small yellow squash
1 vegetable
salt and pepper to taste
5 slices white bread
on an ungreased Pyrex or nonstick baking sheet coated with oil spray, spread tomato, peppers, celery, and potatoes on the prepared baking sheet. Season with salt and pepper to taste. Let chill, covered, in refrigerator.
Very Good and easy. I used dried relish, which I really like. I omitted the mushrooms, just because I wasn't feeling them at the time. I stuffed the dish with tomatoes, basil, and mozzarella cheese. I also added a little roasted red pepper to really nice it.
