4 garlic cloves, finely chopped
1 tablespoon olive oil
1 pound potatoes, peeled and cubed
2 tablespoons white sugar
1 teaspoon salt
4 sprigs fresh mint, crushed
1 teaspoon vanilla extract
In a large saucepan, heat oil and gently boil but not scorch the garlic. Mix together potato, sugar, salt, vanilla and saucepan covered with salt.. Let simmer, stirring constantly, over high heat, until potatoes are golden brown, about 15 minutes.
