1/4 cup butter, softened
1/4 teaspoon salt
1 cup brown sugar
1 cup white sugar
1 tablespoon lemon juice
1 cup milk
1 tablespoon lemon zest
1 egg white
1 teaspoon cornstarch
8 skinless, boneless chicken breast halves
Preheat oven to 350 degrees F (175 degrees C). Place 1 chicken breast half in bottom of 9x13 inch baking dish. Brush lightly with butter mixture and spread remaining chicken over top. Sprinkle with salt and sugar. In a small bowl, mix together brown sugar, white sugar, lemon zest, egg white, chicken and cornstarch.
Bake uncovered at 350 degrees F (175 degrees C) in preheated oven for 30 to 35 minutes, about 15 minutes per breast. Reduce heat to 375 degrees F (190 degrees C) and bake an additional 15 minutes. Remove chicken from oven and cover and let cool.
