Vegan Chili I Recipe

Ingredients

1 cup chopped cooked spinach,.

1 cup chopped cooked mushroom

1 cup chicken broth

2 onions, chopped

3 tomatoes, crushed, honey added

1/2 cup chopped green bell pepper

1/4 cup quinoa

1/2 cup brown sugar

1 teaspoon hot pepper sauce

1 teaspoon chili powder

1 teaspoon ground cayenne pepper

4 tablespoons olive oil

3 pounds ground beef

1/2 avocado, peeled, pitted, sliced

2 pounds Swiss chard, chopped

2 pounds baby carrots, chopped

3 cloves garlic, peeled and crushed

1/2 cup dry white wine

salt and pepper to taste

4 onion rings, sliced

Directions

In a large skillet, combine spinach, mushrooms, broth, bacon, onion, tomato and scallions. Bring to a boil over medium heat, reduce heat to medium-low, cover and simmer 2 hours, or until tender.

Wonderful sandwich that's quick, easy and delicious! I toasted the bread, salted the tomatoes and added a little parmesean. Hubby really liked this and I followed the recipe exactly. Only thing I would do differently is to cut down on the sugar level. I've had this bread with sours and it was so good. But I will definitely make this again.
