2 cups graham cracker crumbs
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg (optional)
1 cup white sugar
1/2 cup buttermilk
1 egg, beaten
3 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
1/2 cup butter
1 cup white sugar
1 teaspoon vanilla extract
1 cup chopped pecans
Preheat oven to 350 degrees F(175 degrees C). Lightly grease an 8x8 inch loaf pan.
In a medium bowl, combine graham cracker crumbs, cinnamon, nutmeg, and 1/2 cup of the sugar. Mix well, then add 1/2 cup butter. Mix until butter is melted. Whisk in pancake flour, baking soda and salt, one cup at a time, until mixture forms a ball. Stir in flour mixture alternately with cake batter.
