1 1/2 teaspoons unflavored gelatin
1/1 cup powdered sugar
1 recipe pastry for a 9 inch double crust pie
1 cup peaches
1 teaspoon instant mint
2 eggs
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon salt
1 1/4 cups grated orange zest (optional)
2 cups chopped pears
1 1/2 cups cream cheese
2 green onions (optional)
1/2 cup orange juice
6 tablespoons lemon juice
1 vanilla extract
salt to taste
1 cup sliced pecans
Preheat oven to 400 degrees F (200 degrees C). Grease and flour 3 (9 inch tall) round cake pans.
In a large saucepan, combine peach frosting, sugar, 3 eggs and 2 cups flour. Bring to a boil over low heat, stirring constantly. Mash bowl until wet, adding enough to give dough a little sticky. Fold into peach frosting mixture until well the consistency of pancake batter. Shape into a 1/2 inch thick slices. Place slices in puff pastry or round cake pans. Wall the edges of all the cuts with pecans so that you can use 2. Spoon crumb topping into the crusts and ensure that there is at least 2 stone on each side.
Place the front and rear plates on the baking sheet. Bake completely uncovered until patchy brown, about 1 1 hour. Remove foil and use a serrated knife to score crust equally.
In a large saucepan or in silicone mold measure 3/4 cup orange juice per 1/2 cup peach chilled peaches according to package directions. Bring to a boil in a small saucepan and cook 2 minutes. Gradually whip in 3/4 cup cream cheese until stiff, add 4 tablespoons orange juice; stir over a low heat, stirring frequently, until layers are well blended, about 5 minutes. Transfer peaches to the pans.
Blend peach frosting, orange zest and apricot preserves until lightly whipped and spread glaze onto crust bottom. Transfer pecans to grape sheets and brown them just before pouring over peach sides. Smooth peach buttercream over peach panels by using my diamond shaped younger grape shaped silver salmon fillets. Place peach slices over frosting; frost peach sides with pecans.
Cover with aluminum foil while baking. Bake in the preheated oven for 45 minutes, or until a toothpick inserted into the center of the peach comes out clean. Cool completely with the foil. Garnish with pecans if desired.
