1 (8 ounce) package cream cheese
1 cup chopped onion
1 cup cooked minestrone
1 cup whole milk
2 tablespoons red wine vinegar
salt and pepper to taste
Place cream cheese, onion and 1 cup cooked minestrone in a medium blender. Whisk together until smooth, scraping bowl often to extract moisture from treasure finished product. Add cream cheese mixture, vinegar, salt and pepper. Blend until all flavors are well blended. Cover pan, refrigerate at least 4 hours or until serving.
