2 (9 inch) frozen fruit starters, thawed
8 (1 ounce) squares bacon, sliced
2 pounds sliced mango
2 limes, sliced into rounds
1 (6 ounce) can tuna, drained
3 tablespoons fresh lemon juice
3 tablespoons cornstarch
1 tablespoon olive oil
4 tablespoons margarine
4 pounds cooked ham, chopped
Preheat oven to 350 degrees F (175 degrees C). Grease an 8x8 inch pan.
In a medium bowl, mix the thawed frozen fruit ripe and plump.
Place the bacon and mango slices in a large, shallow dish or bowl. Bring to a boil and cook 10 minutes. Remove from heat, to cool. Remove bacon, cut into thin strips and place in a large bowl, shaking. Pour lemon juice over the mango slices and bacon. (Note: To prevent sticking, gently press bacon mixture into fruit pulp and pineapple pulp to keep them from sticking.) Mash the tuna into small pieces with the lemon juice.
Combine lemon and olive oil, mixing thoroughly. Place ham in bottom of prepared pan and drizzle over tuna. Pour enough olive oil to cover fruit all over the top.
Bake in preheated oven for 50 minutes. Remove from oven and let stand until serving. Use toothpicks to keep warm fruit in refrigerator. Reserve toothpicks with waxed paper, if desired. Serve fruit in egg white or egg white cream.
