Lime Juice Bread Recipe

Ingredients

1/3 cup margarine

1 cup white sugar

3/4 cup lemon juice

1 cup lemon-lime flavored carbonated beverage

1/2 teaspoon vanilla extract

2 eggs, beaten

1 cup milk

1 teaspoon vanilla extract

2 teaspoons lemon zest

4 cups bread flour

1/2 cup margarine

3/4 teaspoon baking soda

1 cup chopped pecans

Directions

Preheat oven to 350 degrees F (175 degrees C). Roll out 1/3 cup margarine at a time to make a crust. Place pan in the preheated oven for 10 minutes, or until a small amount of liquid dropped into fingertip sized portions of crust formed a soft pull on the sides of the pan.

Combine sugar and lemon juice; pour mixture over bread in pan. Bake for 30 minutes, or until lightly browned. Serve warm. Cool on pie plate.

Meanwhile, place lemon-lime soda in a small saucepan. Bring to a boil, then reduce heat and simmer for 10 minutes. Stir lemon zest into lemon mixture and juice but do not boil. Let cool.

Heat margarine in microwave-safe pan or in small saucepan until hot. Brush over top of bread, allowing steam to escape and lemon juice to coat. Remove bread from pan, pour mixture over bread and serve hot.

Serve warm lemon bread with sliced pecans on top.
