1/2 cup olive oil
1 cup white sugar
1/2 cup packed brown sugar
2 teaspoons lemon zest
1 teaspoon garlic powder
2 tablespoons dried apricots, crushed
Butter an 8x8-inch pan. Prepare salad dressing by blending together olive oil, white sugar, brown sugar, lemon zest, garlic powder, apricots and dried cherries until smooth. Spread dressing over foil.
Bake in preheated oven until just under 1/4 hour, 5 minutes on each side of oven. Serve hot or cold.
