2 cups water
1 cup white sugar
1 tablespoon lemon juice
1 teaspoon coffee extract
1 teaspoon lemon-lime flavored carbonated beverage
1/4 teaspoon lemon zest
In a medium saucepan, bring water and sugar to a boil. Boil for about 5 minutes. Stir in lemon juice and lemon-lime flavored carbonated beverage. Cover and let cool.
Preheat oven to 350 degrees F (175 degrees C). Grease bottom of a 9 inch springform pan. Place 1/2 cup lemon mix mixture on the bottom of the pan. Sprinkle remaining lemon zest over the fruit, just enough to get the sugar to stick.
Bake in preheated oven for 20 minutes. Turn onto rack of oven and allow to cool completely. Chill overnight before removing from pan. Roll out until very fine. Cut into bite size pieces.
